I started on day 4 of the Whole 30

I think the anxiety buildup of starting was ten times worse than actually starting.

Besides either accidentally using too much olive oil in 2 dishes last night or using bad garlic in one, it’s been smooth (I threw up pretty much everything I ate for lunch and dinner and thanks to work, had to almost combine lunch and dinner because I decided to go to bed early)

I’m barely even craving snacks or junk now and I was reading these are the worst days. I didn’t go full- Whole30 because if I attempted to quit smoking on top of the restrictive diet, I’d be setting myself up to fail. I’m even craving those less and smoking under a half pack a day.

Every time I start to feel annoyed with myself for taking on this “no desert” “diet,” I just have to remind myself it’s only a month and the benefits should be much better than giving up junk food.

 

Yesterday, I decided to keep the computer turned off and put my phone away after I got off work. I also cut my kids’ electronic time 2 hours before bed and they both went to bed on time and slept soundly- but we overslept and the alarm didn’t wake us up. (we had a HORRIBLE night the night before and none of us got much sleep)

I’m going to do that again tonight and see if it’s a repeat, I’ve been reading the book “Sleep Smarter” by Shawn Stevenson and there are so many things he suggests I’m planning on trying.

I would recommend that book to anyone who wakes up every morning exhausted and is always feeling tired. He goes into the science behind the suggestions and explains things in an easy to understand way.

I also started working out again, not too big of a difference since I would start one regime then move on to another. This time it’s a mix with HIIT and Yoga. Since I’m no longer in my 20s, I know I need to start taking things more seriously. I have logged off Facebook, not sure if this time it will be a few weeks or a few months. I kept Messenger so I could talk to people but other than that, I’m off it for a while.

Other social networks are linked to my business and I spend less time on those, so they are a nonissue, but I have been finding that Facebook is my kryptonite with getting anything at all done.

This past week has been crazy

Since leaving my job, I have been working on my Nano project- which turned into a short story I will be putting out somehow when I get it finished and a novel I am wanting to self publish when I get it finished. I have decided that, instead of trying the traditional route, I’m going to go ahead and self publish. I’m still looking into the different platforms but I still have time.

On top of that, I’m trying to prepare Bethcessories for the holidays- including my first print advertisement for local business. My word count for Nano is suffering, but my businesses are picking up right now. I guess you always have to sacrifice one thing for another. In the very near future, I’m going to be working more on my DIYmommy page, I’m trying to come up with a good domain for it since DIY mommy is taken. I want this to be different from this website but I’m not sure what to name it.

How Many Times Have You Had to Reheat the Same Cup of Coffee?

I’m sure any other coffee addict moms can answer. I think my record for reheating coffee was about 5 or 6 times- including 2 times without drinking any because I forgot to take it out of the microwave.

Once I left a cup of decaf in the microwave, forgot about it because we were so busy packing to move. We moved the microwave into our new apartment and the next day(2-3 days after leaving the coffee) I opened it and found the mug still intact and not a single drop spilled.

I’m becoming my mom. I grew up watching her constantly misplace her cup and now every day it feels like I have to search for it.

Homemade Mocha Latte

I love mocha lattes from Starbucks and finally found a recipe for it a while back. It tastes just as good as the ones from there.I was able to make it Gluten/Dairy/Soy free

Fresh brewed coffee

Cocoa Powder

Sweetened Almond milk

Sugar

Brew your coffee then mix a spoon of cocoa powder, 2 spoons of sugar and add milk to your preference.

The alternative I found was to use chocolate almond milk and it works almost as well (not as good, but still good)

If you don’t need it to be dairy free, add some whipped cream on top and toss in a few df/gf/sf Enjoy Life brand chocolate chips on top.

I can’t believe the difference a year makes

We just got home from the beach yesterday. We went last year during the same week.

I found our old beach pictures from last year and was amazed by how different the two year old looks.She looks so much older now, is now the size of a 3 year old and is talking, running, jumping and was so much more active. She was even trying to teach herself how to swim in the baby pool (partially dragging herself and partially starting to dog paddle- following the lead of some of the other kids she was watching and playing with)

It had me thinking about last year (she was 1 1/2 and now she’s 2 1/2) and also wonerding what the next year will bring us.

Now, she still loves bubbles, she loves nail polish, hats, headbands, necklaces, bracelets and rings. She loves lollipops, Ciao brand vegan cheese, apple juice and soy vanilla yogurt. (or as she calls it, “ice cream.”)

Back then she ate everything but had chronic diarrhea but now we know she can’t have animal milk or animal milk products (including goats milk or cheese) so we have to give her vegan butter, sour cream, cream cheese, cheese and ice cream)

Back then she would eat nearly anything and had a very healthy appetite, but now she only snacks and eats cheese, fruits and some vegetables- she’ll eat sandwiches occasionally and loves apple juice.

 

My 7 year old is fully potty trained, but has been since she was 5. (she was potty trained during the day at 4 but still in overnight pull ups- now she’s almost fully accident free), she’s talking a lot more, starting to be able to jump off the ground and can do stairs and stoops/curbs alone. Her speech is improving and she’s now going into her bedroom to play. She still melts down with loud noises and has ear tubes again but she’s getting a tiny bit better with some noise. She’s the one in the family who can eat whatever she wants but still eats like a bird. We did finally get her stably up to 38lbs but next year her sister still is probably going to pass her up weight wise.

She has also come so far this year, but she looks about the same. She’s not at an age where looks drastically change. With the two year old, she moved out of being a baby to being a toddler and you can see it plain as day.

Gluten and dairy free salmon pasta salad

I made this for dinner and it turned out great.
It’s a gluten and dairy free pasta salad.
I just threw it together, so I didnt measure things.

This will be an unprofessional recipe, but I made this tonight and only measure when it’s important

Gf/df pasta
2 tomatoes
1/2 package of celery
1/3 bunch of green onion
1-2 cups mayo
1 full sized shredded piece of cooked salmon (2 cans of tuna would go well as well)
Cook the salmon and boil the pasta
Shred salmon while cooking
Chop celery, tomato (chunks) and cut green onions and combine in a large bowl
Toss, add in salmon and drained noodles
Mix in mayo and serve

Cant tell you exactly how many servings it made either but it was fast and extremely easy- and my two year old had fun helping me mix.

I never thought a bowel movement would excite me

I was always beyond disgusted about the whole concept. I still can’t say p**p without gagging but my 7 year old was born and we began a battle around a year with constipation. She’ll get so backed up at times, she has been hospitalized. There are times she’ll be so constipated, she’ll cry while doing it. Now, even though we do have medication help (Miralax), she is able to without the tears- and she’s now going on her own without prompting. That itself seems to be an accomplishment since I’ve seen quite a few kids with her condition who aren’t potty trained at all.

My youngest is the opposite, any animal cheese or milk and she’ll have diarrhea. We are finally getting the hang of her (more expensive) diet, and it’s paying off.  She’ is now having more solid and less runny blow outs.

 

If you had told me when I was 20 that in 10 years, I would be monitoring and discussing poop with anyone (doctors etc), I’d have said you were out of your mind. I guess having kids changes things. I still almost puke when I smell vomit, but I can clean it up and deal with (kids) puking on me. I also can change a diaper (lost a job because I couldn’t change diapers- well, wouldn’t) and my oldest was my first diaper changing experience (and how I learned that boys aren’t the only ones who can pee straight up in the air…)

This coming June I’m taking my first ever paid vacation from work

Since I’ll have a full week off, I have decided that the month of June I am going to try to do one post a day and come up with either 1 post or one article to submit to a magazine or blog every day through June.

Coming up with ideas shouldn’t be too difficult.

I have 11 more days in this month and I’ll be brainstorming topics (privately) and I’ll try to come up with 30 varied posts.

Day 6 of the 21 Days Happiness Challenge

Today was to start with a meditation. I got off to a rocky start, but I did get a minute or two in. I have been trying to get it in daily- different times of the day, though.

Tomorrow’s challenge-

Today, be mindful of the quality of food you are eating, and start each meal by taking the first five bites with full awareness.

So, tomorrow I’ll be trying to focus on what I’m eating instead of just eating. Maybe it can help me with cutting back how much I eat. I guess I’ll see how easy it is tomorrow.

Day 2 of the Pop Fast

Day 2 on the pop/energy drink fast was even easier than I thought it would be.

Now, on day 3, I’m adding in junk food. I went grocery shopping today and conveniently left out buying any junk food I can eat. (no gluten free cookies, cakes or anything)

I did load up on fruit- that way I can get my sugar fix on either lightly sweetened tea (I bought iced tea bags) or fruit. I’m hoping doing this will help me both feel better and drop another size (at least)
When I was in high school, I cut pop and within a very short time, lost about 20lbs from that alone. Another time I dropped 15lbs.

Yes, I am doing this solely to try to lose weight (ok, and help my blood sugar a bit- but I believe losing weight can help with blood sugar regulation)
